Bee honey significantly enhances the microbial quality and functional properties of yogurt while acting as a natural sweetener. Standard microbiological and physicochemical analyses demonstrate that honey exhibits potent antimicrobial activity against common pathogens such as Staphylococcus aureus and Escherichia coli, particularly at concentrations of fifty percent and one hundred percent. When added to yogurt during fermentation, honey maintains optimal bacterial counts and supports ideal acidity levels. Furthermore, incorporating honey increases soluble solids, slightly raises protein content, and reduces overall moisture levels without altering the total fat composition. These results highlight the ability of bee honey to enhance product safety, boost nutritional benefits, and improve overall functional value in modern functional dairy production.
