Abstract
The Inaugural Symposium of Research and Innovation for Food (SoRIF) 2021 was held virtually on June 23–24, 2021, under the theme "Fundamental and Applied Research towards Technological Development of Food." Organized by ARIF and B-FoST from Universiti Teknologi MARA (Cawangan Negeri Sembilan, Kampus Kuala Pilah) alongside international university and government partners, the symposium provided a platform for researchers and final-year students to share their food science and technology findings. This proceeding book compiles their extended abstracts, curated by a dedicated editorial team who managed the formatting without assuming liability for the participants' content, research ethics, or language accuracy.
