Abstract

A study was conducted on four formulations of chicken meat balls to observe the effect of adding water extract from Mango and Guava on the quality of frozen chicken ball (-18°C). The four formulations used in this study were chicken balls added with 400ppm of Mangifera indica L. extract; and 800ppm Psidium guavaja L.; 200ppm synthetic antioxidant (BHA) and a control. Antioxidative activities of Mangifera indica L. and Psidium guavaja L. extract were analyzed before being added into the product. Analyses such as total phenolic compound determination, Ferum (III) reducing power (FRAP) and ferric thiocyanate (FTC) were carried out on the extracts. Thiobarcituric acid (TBA) test and Peroxide Value (PV) determination were done on the chicken meat ball samples which had been stored in temperature of -18°C for 0, 1, 2 and 3 months of frozen storage. Sensory evaluation (hedonic test) was carried out on the samples which were stored for 0 and 2 months to evaluate consumers’ acceptance. The analysis of total phenolic compound showed that Mangifera indica L. had higher phenolic compound at 548.77 µg/100gram fresh weight compared to Psidium guavaja L. at 222.09mg µg/100gram fresh weight.
